Pecorino cheese made with not-pasteurized milk of Massese sheep (a race which produces only a few litres of milk a day). Very particular and slightly acid taste. Excellent with white wines (Poggio Santa Lucia or Vernaccia di San Gimignano).
It is possible choose a slice Gr 500 or whole form - from 1,2 kg to 1,4 kg approximately
The primitive raw pecorino cheese of the Crete Senesi is produced with milk from Massese sheep which, unlike other pecorino cheeses, is processed raw (not pasteurized) to keep the flavours of the past intact. With its particular and acidulous taste, this cheese is perfect to be paired with white wines.
