Our wine: the land is located on a plateau at 350 m. above sea level, in an excellent position, with a medium-strong terroir. The harvest is carried out exclusively by hand, after a selection of the excess grapes. Our wines do not undergo any filtering and are decanted only by natural decantation; some small sediment in the bottle is possible. The processing and aging take place entirely in our cellar, thanks to a meticulous work carried out entirely by us.
Our business philosophy leads us not to use an oenologist, but only ISVEA analysis consultancy. Furthermore, we do not adhere to the D.O.C. and D.O.C.G. as we believe that the specification was born with a correct basic principle, but that later it became a purely commercial and bureaucratic brand not guaranteeing the best quality ever.
We personally ensure control, aware of being able to offer a wine that allows us to pursue our goals: quality and genuineness while respecting our tradition, the experience of the years and the competence that characterizes us.
Our olive oil: the olive grove is located within the company, located at 600 m. above sea level. on stony ground, excellent conditions for extra virgin olive oil, which allow us not to use chemical treatments, not suffering from the fly problem. The Cultivars are Frantoio (70%), Leccino (25%) and Cipressino (5%) which make our oil delicate and fruity. Once harvested, the olives are brought to the mill the same evening in order to keep all their qualities intact.
